Two weeks ago I visited the Farmer's Market in Wimbledon Park. I was looking for good quality raw honey (BTW the best choice ever) for a project with a friend. I couldn't resist buying this fantastic LACITANO KALE and also fresh fennel. Even though we are in winter and our bodies crave for hot or warm food, I decided to prepare a kale pesto 😉 to accompany rice, pasta, sautéed vegetables, salads or even a sandwich, you name it. I must say it was really YUMMY.
Here's the recipe:
120g of chopped curly kale (or 2 cups)
60g of chopped fresh fennel (or 1/2)
40g pine nuts
Rock salt and black pepper to taste
1/2 or 1 lime or lemon
Simply process all the ingredients in a food processor and adjust the seasoning if necessary.
I'm sure you'll enjoy it as it's an amazing flavour booster. 😋
